The goat stew it`s a big tradition at São Roque do Faial parish and very appreciate by the people in Madeira Island.
The goat is created by the people in this parish and this justify why the meal is so tender and tasty.
This dish is always present in the Madeira gastronomy especially in Easter.
5 garlic’s clove
1 l of treated wine
2 cinnamon sticks
2 tablespoon of lard
1 spring of rosemary
salt and pepper
In the day before to cook this dish, season the goat with salt, pepper, garlic`s, cinnamon, rosemary and wine.
In the day to confection, do the midden with the lard, onion and the tomato. Next join the meal and let stew during 10 minutes.
After this, join the wine marinade and let’s stew during 50 minutes. If is necessary, can join water.
This one is normally served with potatoes and cooked vegetables.
